They open as soon as there is enough regular traffic to send one filled box a week rather than a box per order.

Prices are ours, not Kimoto's. We buy at their trade price, pay freight from Tokyo and Australian duty on the way in, and the figure shown is what the piece costs delivered here. Nothing is ordered from Japan until you have ordered it from us, so a piece that turns out to be discontinued is refunded in full rather than substituted.

Anything under about ¥5,000 in their catalogue is left off this page: a parcel from Tokyo is priced by its size rather than by what is in it, so on the smallest tumblers the freight costs more than the trade discount saves and the piece would land here dearer than it sells for in Japan.

How Japan came to make it

Japan ferments with a mould rather than with malt. Koji, Aspergillus oryzae, is grown on steamed rice to turn starch into sugar, and in sake brewing that conversion happens at the same time as fermentation, in the same vessel. It is a technique with no European equivalent and it is documented as early as the eighth century.

Distilling arrived later and from the south. The earliest written mention of shochu is a complaint: in 1559 carpenters working on a shrine in Kagoshima scratched into the woodwork that the priest had been too mean to give them any. Whisky is younger still. Masataka Taketsuru studied chemistry and distilling in Scotland after the First World War, and the first malt distillery at Yamazaki was built in 1923.
